  • 900g tomatoes or two large tins of chopped tomatoes
  • 1 tablespoon olive or rapeseed oil
  • 2 medium onions, diced
  • 175g red lentils
  • 2 pints (1150 ml) vegetable stock
  • 2 tbsp Heinz Tomato Ketchup
  • 1 tsp basil
  • 1 tsp marjoram
  • 1 tbsp parsley, chopped
  • Sea salt and freshly ground pepper
  • 1 tbsp butter (optional)

  1. If you are using fresh tomatoes, put them into a bowl and pour boiling water over them. Peel and discard the skins, then roughly chop the tomatoes.
  2. Heat the oil in a frying pan and sautè the onion until soft. Rinse the lentils and add to the onion with the tomatoes and stock.
  3. Simmer gently for 30-40 minutes until everything is well cooked.
  4. Liquidize until smooth.
  5. Stir in the ketchup, herbs and butter and season with salt and pepper. Simmer for 10 minutes more. Serve piping hot with cheesy toast, brown scones or brown bread.
