  • 4 organic, on-the-vine large tomatoes
  • 4 free-range eggs
  • Parmesan
  • Olive oil
  • Ground garlic

  1. Preheat the oven to 180°C/160°C fan/gas mark 4 and slice the top off the tomatoes. Hollow them out to make a bowl. Pour in a little olive oil, pepper, and ground garlic.
  2. Crack and pour in egg. This can be messy, so as a quick tip, I made a mini "funnel" from a widemouthed sports drink bottle, which fits perfectly inside the tomato.
  3. Top with a little more seasoning and some Parmesan shavings.
  4. Arrange all four in a baking dish so that they cannot roll, place the lids to the sides and bake for 40 minutes until set.

"This is a delicious morning treat; the beauty is they can be prepared the night before and popped in oven the next morning to cook. I came up with this as a Mother's Day morning surprise for my partner; she loved how the seasoning and Parmesan infused with tomato juices and egg as it cooked."
