Honey and Cinnamon Butter Pancakes

For the pancakes:
  • 100g flour
  • 300ml milk
  • 1 egg
  • ¼ tsp salt
  • 1 tsp butter, melted, plus extra for cooking
  • 1 tsp cinnamon
For the honey and cinnamon butter:
  • 45g unsalted butter, softened
  • 2 tbsp Boyne Valley Squeezy Honey
  • ¼ tsp ground cinnamon
  • ¼ tsp salt

Fresh fruit
Icing sugar
  1. Mix together all the pancake ingredients and leave to sit for at least 20 minutes.
  2. Heat a frying pan over a medium-high heat and melt a small pat of butter. Pour in the pancake mixture and swirl the pan so it coats the botto. Cook for one minute on each side until golden brown.
  3. Combine all the ingredients for the honey and cinnamon butter and mix well. Serve warm with fresh fruit and dust with icing sugar.
