Mediterranean Bites

Mediterranean Bites
  • 1 tsp vegetable oil
  • 1 leek
  • Salt and black pepper
  • 400g pastry dough (any leftover pastry, pizza or bread dough)
  • 4 tbsp green pesto
  • 12-16 Horgan's Calabrian Sundried Tomatoes
  • 125g Horgan's Black Olives, sliced

  1. Preheat the oven to 180°C/160°C fan/gas mark 4. Heat the oil in a frying pan and cook the leek for 3-4 minutes until soft. Season with salt and pepper.
  2. Trim the pastry into two squares and roll out on a lightly-floured surface. Brush over the pesto, leaving a 2cm border around the edges.
  3. Layer the leek, Horgan's Calabrian Sundried Tomatoes and Black Olives and roll up each pastry like a Swiss roll.
  4. Slice each roll into six pieces and place in lightly-oiled cupcake tins. Bake for 8-10 minutes until golden brown and puffed.
