"Fifty Shades" Strawberry Chocolate Mocha Cake

For the cake:
  • 230g unsalted butter, at room temperature
  • 230g caster sugar
  • 4 large eggs, separated
  • 1½ tbsp instant coffee, dissolved in 2 tbsp water
  • 1 tsp vanilla extract
  • 230g self-raising flour
  • 2 tbsp cornflour
  • 1 tsp baking powder
  • 75g Homecook 72% Cocoa Belgian Dark Chocolate, grated

For the strawberry cream frosting:
  • 300g strawberries
  • 500ml double cream
  • 250g icing sugar
  • 1 x 160g tub of chocolate cream cheese
  • 200g Homecook 72% Cocoa Belgian Dark Chocolate, grated

  1. Preheat the oven to 180°C/160°C fan/gas mark 4 and grease a cake tin. Beat the butter for one minute until creamy. Gradually beat in the sugar.
  2. Beat the egg whites until stiff. Stir the egg yolks, dissolved coffee and vanilla into the butter and sugar mixture.
  3. Sieve the flour, cornflour and baking powder into the mixture and stir to combine.
  4. Add grated Homecook 72% Cocoa Belgian Dark Chocolate, fold in the egg whites and mix gently. Pour the mixture into the tin and bake for 35-40 minutes or until the sponge springs back. Leave to cool and split in half.
  5. Purée the strawberries in a food processor for 40-50 seconds. Whip the cream and icing sugar in a bowl, add to the strawberries in the food processor and purée together until stiff.
  6. When the cakes are cooled, sandwich the halves together with a layer of chocolate cream cheese and the strawberry cream.
  7. Spread the remainder of the strawberry cream onto the top and sides of the cake. Cover the sides in grated chocolate and melt the remaining chocolate to drizzle over the top. Refrigerate for 10 minutes before serving.
