  • 3-4 tbsp olive oil
  • 1 cinnamon stick
  • 2-3 garlic cloves
  • 1 black cardamom pod
  • 2 bay leaves
  • 2 medium onions, thinly sliced
  • 2 medium tomatoes, chopped
  • 1 tsp each chilli, turmeric, coriander, cumin and pepper powder
  • Ginger and garlic paste
  • Salt, to taste
  • 1 whole chicken, jointed
  • Handful of fresh coriander, chopped

For the pulaw:
250g basmati rice Butter 3 medium cups of water Salt Food colouring 10g fried onions
  1. 1 Pour the olive oil into a deep pan and place over a high heat. Add the cinnamon stick, cloves, black cardamom and bay leaves, then cover with the lid until the pan fills with smoke.
  2. 2 Turn the heat down to medium, slowly open the lid and add the sliced onions. Cook until the onions are golden and crunchy.
  3. 3 Add the chopped tomatoes, chilli, turmeric, coriander, cumin, pepper powder and some ginger and garlic paste. Cook the mixture until light brown in colour, then season with salt.
  4. 4 Add the chicken pieces and mix well. Add 250ml water and cover with the lid. Place over a medium heat and cook for 15 minutes.
  5. 5 Add the fresh coriander.
  6. 6 Meanwhile, for the pulaw, wash the rice and soak for 5-10 minutes in water.
  7. 7 Heat some butter in a large pan. Add 2-3 cups of water and salt according to taste, then cover until the water comes to the boil.
  8. 8 Add the rice and cook until the water has been completely absorbed and the rice is cooked.
  9. 9 Add some food colouring to decorate, and garnish with fried onions. Serve the rice with the chicken curry.
