Chicken and chorizo penne
Serves 6

  • 6 garlic cloves
  • Salt and black pepper
  • Olive oil, for drizzling
  • 1 vegetable stock cube
  • 300ml hot water
  • 1 dessertspoon of fresh thyme, chopped
  • 2 fresh bay leaves
  • 1 medium red chilli, chopped
  • 1 medium onion, chopped
  • 100g chorizo sausage, sliced
  • 2 chicken fillets, diced
  • 1 glass of white wine
  • 500g Barilla penne rigate
  • Butter
  • 100g button mushrooms
  • 10 fresh basil leaves, plus sprigs to garnish
  • 3 dessertspoons of crème fraiche

  1. 1 Preheat the oven to 180˚C/160˚C fan/gas mark 4. Place the garlic in an ovenproof dish, season with salt and pepper and drizzle with olive oil. Cover with tin foil and roast for 15 minutes or until the garlic is soft.
  2. 2 Place the stock cube and hot water in a measuring jug with the thyme, bay leaves and red chilli. Leave to infuse.
  3. 3 Heat some olive oil in a pan. Add the onion and chorizo and cook unti browned.
  4. 4 Add the chicken and sear on all sides. Add the white wine and reduce by half. Pour in the contents of the jug, then cover and simmer.
  5. 5 Cook the pasta according to packet instructions. Drain and rinse in cold water.
  6. 6 Heat some butter in a small pan over a medium heat and cook the mushrooms.
  7. 7 Place the roasted garlic and the basil into a pestle and grind with a mortar. Add to the pan with the chicken and simmer for five minutes. Add the crème fraiche and stir well.
  8. 8 Add the cooked pasta and mushrooms to the pan and combine well. Simmer until the pasta has heated throughout.
  9. 9 Serve in pasta bowls garnished with a sprig of fresh basil.
