Spicy Vegetable Bread
Makes 1 loaf

For the bread:
  • 110g wholemeal flour
  • 110g plain flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 55g butter
  • 110g courgette, grated
  • 110g carrot, grated
  • 1 tsp dried or fresh rosemary (optional)
  • 65g Coolea or Parmesan cheese
  • 1 egg, beaten
  • 3 tbsp Heinz Mayonnaise
  • 3 tbsp Lea & Perrins Worcestershire sauce
  • Sesame seeds (optional)

For the tomato sauce:
  • Oil, for cooking
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 x 400g tin of chopped tomatoes, or a jar of tomato passata
  • 1 dessertspoon tomato purée
  • Heinz Hot Pepper Fruity Sauce, to taste
  • Pinch of sugar
  • Salt and black pepper
  • Splash of Lea & Perrins Worcestershire sauce

  1. 1 Preheat the oven to 190˚C/170˚C fan/gas mark 5.
  2. 2 Mix the first four ingredients together, then rub in the butter using fingertips or a food processor.
  3. 3 Add the next four ingredients, then stir in the liquid ingredients and mix well.
  4. 4 Place into a 2lb loaf tin, sprinkling the top with sesame or other seeds if desired.
  5. 5 Bake for about 50 minutes until set.
  6. 6 For the tomato sauce, heat some oil in a pan and gently fry the onion until soft. Add the remaining ingredients and cook for 15-20 minutes, then blend.
  7. 7 Serve the bread hot with the tomato sauce.

Originally devised by the late Phyl O’Kelly, cookery columnist with the then Cork Examiner newspaper, I have tweaked it over the years, but if a basic recipe is good it’ll stand the test of time. It’s easy to make, using everyday ingredients but maybe in a surprising combination. Mayonnaise, Worcestershire sauce and brown flour? Go on! Give it a try and surprise yourself with this nutritious, flavourful loaf."
