Kung Pao Chicken
Serves 2

  • 2 chicken fillets, cut into strips
  • 1 tbsp oil
  • 125g rice
  • ¼ tsp chilli flakes
  • ½ tbsp ginger, grated
  • ½ tbsp garlic, crushed
  • ¼ tsp peppercorns, crushed
  • ½ red pepper, chopped
  • ½ green pepper, chopped
  • A few babycorns
  • A few mangetout peas
  • A few florets of broccoli
  • 3 tbsp cashew nuts
  • 1 spring onion, chopped


For the marinade:
  • 1 tbsp oil
  • ½ tbsp soy sauce
  • ½ tbsp cornflour
  • 1 tsp rice wine vinegar


For the sauce:
  • 1 tsp sugar
  • 1 tbsp soy sauce
  • 1 tsp rice wine vinegar
  • 1 tsp sesame oil
  • 1 tsp garlic
  • ½ tsp cornflour
  • 100ml chicken stock


  1. 1 Mix the marinade ingredients together in a bowl and add the chicken. Cover with clingfilm and refrigerate for at least 10 minutes.
  2. 2 Mix all of the sauce ingredients together and leave aside.
  3. 3 Heat half of the oil in a wok. Cook the chicken thoroughly and remove.
  4. 4 Meanwhile, boil the rice according to the packet instructions.
  5. 5 In the same wok, heat the remaining oil and add the chilli flakes, ginger, garlic and peppercorns. Cook until just aromatic.
  6. 6 Add the vegetables and cook for 3-5 minutes, then add the sauce and stir together.
  7. 7 Add the cooked chicken back to the wok and stir to combine.
  8. 8 Add the cashew nuts and the spring onion. Stir to combine and divide between plates. Serve with the cooked rice.

"This is the dish I cooked for my home economics practical exam. I have many memories of cooking it, and it became a favourite while we practised in class. At first my teacher thought I was being too adventurous cooking this recipe, but then she tasted it and loved it! She let me take on the challenge and the exam went really well. My friends would be ready after class with forks in hand to devour it, and it was renamed ‘Orla’s Kung Pao!"
